GRILLED MACKEREL WITH ORIENTAL SALSA
Serves 4
Ingredients:
4 cutlets of Spanish mackerel
1 tablespoon olive oil
For the salsa:
4 dried Chinese mushrooms
boiling water
2 medium vine ripe tomatoes
1/4 cup chopped green shallots
1/4 cup chopped fresh coriander
1 clove garlic, finely chopped
2 teaspoons finely grated ginger
2 tablespoons red wine vinegar
11/2 tablespoons sesame oil
1 tablespoon vegetable oil
1 teaspoon sugar
1 teaspoon chilli paste (optional)
Pinch of Sea salt
Method:
Brush steaks with oil and set aside.
Place mushrooms in a bowl, cover with boiling water and allow to stand for 15 minutes or until soft. Drain and finely chop. Meanwhile seed tomatoes and finely dice.
Combine in a bowl the mushrooms, tomato, shallots, coriander, garlic, ginger, stir to combine. Place vinegar, oils, sugar, chilli paste and salt into a covered container and gently shake. Pour dressing over salsa and toss gently.
BBQ or pan fry fish on medium –high heat for 3 minutes each side. Serve with salsa.
