Recipe
Tzaziki - sauce or dip - a Greek favourite.

Drain 1 litre whole milk yogurt [preferably Greek] in a pillowcase, or tea towel over a large bowl for 4-5 hours. Discard the accumulated whey. By hand, grate one peeled and seeded cucumber. Place flesh in a towel and squeeze tightly to remove all excess water, leave for 30 minutes and repeat. Combine yogurt, cucumber, 8 cloves of garlic (pressed), salt and 3 tablespoons of extra virgin olive oil. Keep refrigerated until required. For best results make the day before.
