"SATE LILIT BALI"

Balinese chicken satay

serves 6

1kg minced Chicken
10 gms Shallots finely chopped
40 gms Garlic finely chopped
4 small red chilis – thinly sliced
4 tsps Ginger – finely chopped
4 tsps Galangal – finely chopped
2 tsps Lesser galangal – finely chopped
2 tsps Turmeric – finely chopped
1 tsp Black pepper – ground
2 Cloves – ground
1 tsp Nutmeg – ground
1 tsp Coriander – ground
1 tsp – white sesame seed – ground
Salt and pepper to taste
4 tbsp Oil
36 Satay skewers ( lemon grass)
2 Lime leaves finely shredded
50 gms grated fresh coconut

Method:

Heat the oil in a frying pan on low heat and sauté all the spices, except the lime leaf and coconut until aromatic and cooked.. Remove from flame, allow to cool and blend to a paste. Mix the spice paste with the minced chicken. Add the lime leaf and coconut. Season with salt and pepper. Take 20 gms of the mixture and work around the satay skewers, do the same with the rest. Load the skewers with the meat. Grill the satay to order. Serve with peanut sauce.
