An early morning walking tour takes you through the ancient narrow lanes of Hoi An Ancient Town. Our walk includes a visit to a Confucian temple, the Hoi An Museum, a local 'ancient house' and the famous Japanese Bridge. Your guide will also point out the best shops, tailors and restaurants in Hoi An, ready for the week ahead. Our last stop is the colourful local market with its array of fruits, vegetables and herbs. |

After a tranquil boat trip along the Thu Bon River you arive at our cooking school for your first cooking session. Today's class includes the making of Vietnam's famous fresh spring rolls, along with an introduction to the ancient vietnamese art of food carving and plate decoration. |

Today’s full day cooking session includes a trip to Tra Que Organic Village. We walk with our guide through the market gardens where local farmers work in their fields using the traditional methods of hundreds of years ago - no electrical machinery here! Our guide will introduce us to the distinct colour, texture and flavour of a variety of herbs that feature so prominently in Vietnamese cuisine. Before leaving Tra Que we try a special herbal drink at a local Village home.
Later today our focus is northern cuisine, including the national dish 'Pho', followed by a scrumptious meal of what you've prepared. |

Today is a facinating trip to a local fishing village, travelling through lush countryside stopping at farms along the way. Lunch is at a popular local restaurant overlooking the famous china Beach - steamed tiger prawns in coconut, grilled clams with lemongrass, and squid stuffed with local vegetables are often on the menu.
Southern vietnam is the focus of today's cooking session, including the delicious 'Hot and Sour Fish Soup'. You'll pick your own herbs and spices from the cooking school's garden and your chef will teach you how to use them well! |
